Tasting Note
Crisp and lively, with flavours of lemon, green apple, and a touch of chalky minerality. The acidity is refreshing and well-balanced, providing a clean and persistent finish.
Producer
Domaine Louis Moreau is a 50-hectare estate based in the commune of Beines in the heart of the Chablis appellation. Louis and his wife Anne founded the domaine in 1994. The estate is made up of an impressive number of premier cru and grand cru vineyards with additional holdings in Chablis and Petit Chablis totalling 50 hectares. Petit Chablis comes from the sandy-Portlandian limestone soils of the plateau above the valley. Village-level Chablis is from classic Kimmeridgian clay and is from parcels mainly in Beines and near the town of Chablis.
Winemaking
Chardonnay grapes for Petit Chablis are generally picked after those of Chablis to allow for a late ripening boost. Natural yeasts are used for fermentation with secondary malolactic fermentation taking place to help flesh out the crisp fruit flavours and add subtle creaminess to the mouth feel.
The wine ages for a number of months on fine lees and is bottled shortly before shipping to ensure optimum freshness.
Fun Fact
Apart from having the various designations of Petit Chablis AC, Chablis AC etc, Anne Moreau wanted to showcase the different characteristics of each of the wines. So she added a single descriptors such as “Freshness” for Petit Chablis and “Finenesse” for Chablis to showcase their main characteristics.
Food pairing
An excellent choice for an aperitif or pairing with light seafood dishes.
