Tasting Note
Capitor, from the Latin “capere” (captivate) manages to be enchanting with charm and elegance. The traditional Bordeaux grape varieties Cabernet Sauvignon and Merlot form a classically elegant bouquet of ripe berries, subtle spices with vanilla and coffee beans and a hint of dark chocolate. The complex flavours with soft tannins and a fruity aftertaste linger on a long rewarding finish.

Winemaking
The blend for Capitor (60% Merlot, 35% Cabernet Sauvignon and 5% Cabernet Franc) is typical of the Right Bank in Bordeaux where appellations such as Saint Emilion and Pomerol favour a predominantly Merlot blend. Careful attention is paid in the vineyard where a green harvest takes place. This involves removing under ripened bunches of grapes as the harvest approaches thus concentrating more of the vine’s resources in the better quality berries.
Harvesting takes place when grapes are fully mature with Merlot ripening about 2 weeks before Cabernet. The clusters are destemmed and manually sorted to ensure only the best possible grapes are used. The vinification is temperature controlled to ensure plenty of fruit flavour.

Fun Fact
The metal label on the Capitor bottle is modelled on the metal plates applied to the early exports of Bordeaux in wooden barrels.

To be served with roast lamb with thyme, grilled red meats, braised shirt ribs, spicy rich meat dishes and especially charcuterie and cheeses
