The lavishly-awarded Waipara Hills has been mastering its Cantabrian terroir for over 20 years. At Waipara Hills, the style is simple: It’s about creating balance, encouraging the characteristics of each season’s fruit to shine, and celebrating the unique terroir that is the region and the Waipara Valley vineyards. The result is wine that is rich, textural and complex. From the vineyard to the winery, the Waipara Hills team are hands on. The Winemaker is Krystal Palmer whose favourite white varietal is Sauvignon Blanc.
Winemaking
Made from 100% Sauvignon Blanc sourced from vineyards in both the Wairau and Awatere valleys of the Marlborough region. Settled juice is fermented with a range of yeasts at cool temperatures for about three weeks, a period of resting off the lees is followed by bottling.
Fun Fact
Marlborough is considered to be the cradle of New Zealand wines because it hosts almost half of the country’s vineyards within its borders. Marlborough focuses more on white wines, Sauvignon Blanc being without any doubt the heart and soul of this wine region.
Food pairing
Serve with chilled with fresh seafood, garden salads and vegetable based dishes or a selection of your favourite cheeses, especially goats’ cheese.
