Tasting Note
Oak and fruit are perfectly matched and well integrated; citrus peel and melon are enriched by a subtle, savoury biscuit overlay in the rounded palate. The limey acidity layers through the fruit flavours ensuring food-friendly freshness.
Producer
In 1995 the Gabb family, originally from Shropshire, UK, fell in love with a picturesque wine farm called Journey’s End and restored it to what it is today, now surrounded by 40 hectares of beautiful vineyards.
The Journey’s End vineyards are nestled amongst the Schapenberg hills, where lies 350 million year old decomposed granite soils are one of the most prestigious terroirs in South Africa. The vineyards benefit from the cooling and cleansing south-easterly wind, known locally as the ‘Cape Doctor’, which comes in from nearby False Bay and the Atlantic Ocean.
Winemaking
After handpicking the Chardonnay grapes, a combination of whole bunch pressing as well as destemming ensures minimal tannic influence. Pumping takes place during maturation in stainless steel tanks (90%) and older 300L French oak (10%). The wine is then left in stainless steel tanks at low temperatures for a total of four months post-fermentation with weekly lees stirring to broaden the mouthfeel.
Fun Fact
The wine is named Haystack from the practice of planting wheat in between the vineyard rows which provides extra nutrients for the soil, as well as help prevent soil erosion.
Food pairing
Ideal with seafood and sushi as well as light summer dishes and pasta dishes with creamy sauces.
