Producer
In 1920 , Attilio Ravaioli , son of the last farmer to work for the noble Guidi family, opened the most renowned restaurants in the Bidente Valley: Osteria “Da Tilio”, in Cusercoli. it soon became one of the most popular eateries among locals, who absolutely loved its unique menu featuring terracotta pot roasts and his own house wine. Over 100 years later, the fourth generation of the Ravaioli family is still making high quality wines showcasing the passion with which they cultivate their vineyards and turn grapes into wondrous vinous elixirs
Winemaking
Following on from the careful treatment in the vineyard, Trebbiano grapes are harvested at optimum ripeness to ensure the varietal’s full signature flavours are preserved. Vinification takes place in stainless steel with some wild yeasts as part of the wine’s organic policy. Hardly any other intervention takes place with maturation in stainless steel before bottling.
Fun Fact
This Trebbiano comes from organic grapes. This viticulture takes advantage of natural fertility of the soil, which is enhanced by limited works, improving the biodiversity and avoiding any kind of synthetic chemical products. The vine protection is done by copper and sulphur. Also, for the soil treatment the chemical fertilizers are avoided. The oenological products used during the vinification are organically certified.
Food pairing
