Tasting Note
Wild blackcurrant and dark fruit on the nose is complimented by sweet spice, while the palate brings kirsch notes with a long finish, enhanced by gentle American oak influences.
Winemaking
The fruit is sourced from vineyards in the northern part of California’s Central Valley. The region around Lodi and Manteca enjoys considerable influence from the San Joaquin and Sacramento River deltas, which act as a natural cooling system to the often-searing heat, providing freshness to the ripe, fruit charged Cabernet grapes. The autumn harvest takes place just as the temperatures start to drop and before inclement weather damages the grapes. At the winery, the grapes are destemmed and pressed. Fermentation takes place in stainless steel vats followed by ageing for 6 months in oak barrels to add richness and character.
