Tasting Note
Crisp and refreshing, with a lively acidity and flavours of citrus fruits, green apple, and a hint of honey. The body is light-medium, and the finish is clean and lingering.
Winemaking
Each grape variety is harvested and vinified separately in order to respect the maturity of each
varietal. The harvest date is determined by analysis and tasting the berries. Upon arrival in the
cellar, the grapes are pressed using a pneumatic press. After settling, the must ferments in temperature controlled tanks. At the end of the alcoholic fermentation, the wine is kept in stainless steel tanks until bottling to ensure the wine showcases the freshness of the fruit.
The grape proportions change from one vintage to the next to ensure that the final wine is well balanced and typical of the La Vieille Ferme brand.
